MARSHMALLOW MERMAID PIE &
FALLING IN LOVE PIE


This is a very special post! It's the result of my contest I had a month or so ago! In case you don't remember, my followers got to nominate a movie, then the nominations were voted on, and the winner would have their movie as a post! Well, the stars aligned, and the biggest supporter of Vegan CineGrub won! My friend Amber of Zombie Cats Eating Plants! The movie she nominated was Waitress, a delightful Sundance favorite.

So Amber and I decided to collaborate and each do a pie. Actually, we both set ambitious goals to make more than one, but the pies Jenna makes in the movie aren't vegan, we had the extra task of veganizing these pies. Which means trial and error. But we both came up with one each that we are really happy with. Amber is also doing a post for this on her blog, read it here!

Part of the prize for winning the contest was I would make a small piece of art inspired by the movie, to be sent to the winner. Here it is :) I used Copic pens and markers which use only vegan ink!

This is essentially a chocolate mousse pie. I made a chocolate pudding and whipped cream, then I stirred them together.

I see a lot of raw chocolate pudding recipes using avocado, I tried it one time and it was really good! The most common way of making vegan pudding is using tofu, but I prefer avocado. It may sound weird because avocado is most commonly used in savory dishes, but it makes sense for a dessert, it's a fruit!

Here's what I did for the pudding...

2 Avocados
3 1/2 TBSP Cocoa powder
1/4 cup Agave Nectar
1/4 cup Pure Maple Syrup
1 tsp Vanilla
1/8 tsp salt
1/2 cup almond milk

Put it all in a blender and blend until smooth. Put it in the fridge while you make your whipped cream.

Whipped Cream

2 cans of full fat coconut milk, thoroughly chilled in the fridge
1/2 cup powdered sugar
2 tsp vanilla

Scoop out the solid white part on the top of the coconut milk can, don't use the water on the bottom. Put coconut fat, powdered sugar and vanilla in a mixing bowl and beat with an electric mixer until you get fluffy whipped cream. Put in fridge and let chill for about 20 minutes.

Stir together pudding and whipped cream and place in your pie shell. I used a pre-made vegan arrowhead mills graham cracker crust :/ I should have made my own, but this was the 3rd pie I attempted, I was running outta steam. FYI though, most graham crackers are not vegan because they have honey in them. If you make the crust yourself, I think a raw pecan crust would be awesome!

Now, just let it sit in the fridge for about 20-30 minutes before serving.
